Pear, Goat Cheese & Brie Crostini

Ingredients

  • 4 oz honey goat cheese (or plain goat cheese and 2 tbsp of honey)
  • 8 oz brie, with rind removed 
  • 1/2 cup sour cream
  • Pepper to taste
  • 4 tbsp olive oil, divided, plus more for garnish
  • 1 loaf baguette
  • 1 pear, sliced
  • Fresh thyme, for garnish
  • Honey, for garnish

Instructions

  1. In a bowl, add the goat cheese, brie, sour cream, pepper, and two tablespoons of olive oil. Mix well using a hand mixer on high speed. Alternatively, you could mix the ingredients in a food processor or with an immersion blender. Just make sure the ingredients are well combined and end up with a smooth creamy texture.
  2. Transfer the cheese spread into a bowl and top with thyme and a splash of olive oil.
  3. Cut the baguette on an angle in even slices. Drizzle the remaining two tablespoons of olive oil evenly over the pieces and toast in the oven at 400 degrees until lightly browned. Don’t overbake them or they will be too hard.
  4. Serve the crostini by layering a dollop of cheese mixture with a slice of pear, and top with a sprinkle of thyme and honey. Enjoy!
