Add the water to a medium saucepan. Zest the lemon until you have about two tablespoons. Add to the water and reserve the rest of the lemon for slices.
Add the cinnamon sticks, peeled ginger root, and honey.
Bring to a boil over medium heat and allow to simmer for 15 minutes until the water is tinged a slight yellow color.
Strain through a fine mesh sieve into two mugs. Add a slice of lemon to each and enjoy!
